How to Make Authentic Brazilian Cuscuz (Corn Couscous)

Cuscuz (Brazilian corn couscous) is a traditional dish made from flocão de milho (coarse corn flour). It's simple, quick, and perfect for breakfast, lunch, or dinner. Soft and fluffy, it pairs well with butter, cheese, eggs, or even shredded chicken. Here’s how you can make it at home!


Ingredients:

1 cup flocão de milho (coarse corn flour)
½ cup water
A pinch of salt
Butter or cheese (optional, for serving)


Instructions:

1️⃣ Hydrate the Corn Flour

In a bowl, mix the flocão de milho with water and salt. Stir well until all the grains are evenly moistened. Let it sit for 5–10 minutes so the grains absorb the water. The texture should be slightly damp but not too wet.

2️⃣ Prepare the Steamer

Use a cuscuzeira (a special couscous steamer) or a regular pot with a steamer insert. Fill the bottom part with water and bring it to a boil.

3️⃣ Steam the Cuscuz

Place the hydrated flocão in the top part of the steamer. Do not press it down too much—this helps keep it light and fluffy. Cover and steam for 10–15 minutes, or until the grains are soft and cooked through.

4️⃣ Serve and Enjoy

Remove from heat and carefully fluff the cuscuz with a fork. Serve warm with butter, cheese, scrambled eggs, or any topping of your choice!


Tips & Variations:

For a creamier texture, add a little milk or coconut milk when hydrating the corn flour.
