How to Make a Pavê Dessert?
Ingredients:
- 1 can of sweetened condensed milk (14 oz or 395 g)
- 2 cups of whole milk
- 2 egg yolks
- 1 tablespoon of cornstarch
- 1 can of heavy cream (14 oz or 395 g)
- 1 packet of ladyfinger biscuits (about 200 g)
- 1 cup of brewed coffee (optional, for dipping the biscuits)
- Chocolate shavings or cocoa powder for garnish
Instructions:
- Prepare the Custard Cream:
- In a saucepan, combine the sweetened condensed milk, 1 1/2 cups of milk, egg yolks, and cornstarch (dissolve the cornstarch in the remaining 1/2 cup of milk before adding).
- Cook over medium heat, stirring constantly, until the mixture thickens into a smooth custard. Remove from heat and let it cool slightly.
- Layer the Pavê:
- Dip each ladyfinger biscuit quickly in the brewed coffee (optional) to lightly moisten.
- In a serving dish, create a layer of custard cream, followed by a layer of coffee-dipped ladyfingers.
- Repeat the layers, ending with a layer of custard on top.
- Add the Heavy Cream:
- Spread the heavy cream over the final layer of custard.
- Garnish and Chill:
Garnish with pieces of your favorite chocolate
Refrigerate for at least 4 hours, or overnight, for the flavors to meld and the dessert to set.

Extra Tip – Prepare a dark chocolate ganache, if desired, to add as the final layer over the white cream. To make it, use 200g of heavy cream and 200g of chocolate melted in the microwave. Mix the cream with the chocolate and spread it over the last layer of white cream. Finish by decorating with your favorite chocolate pieces.
